This morning is an early one! A bunch of us from work are jetting off to New York on the first flight out to celebrate the marriage of one of our co-workers and I can’t wait to see her walk down the aisle! It also doesn’t hurt that the wedding is in NY being that I’ve been dying to get back there – it’s been over a year!  I was hoping for a super brisk, fall week, but the forecast is unfortunately showing 80+ every day we’re there, so I’ll just have to deal with my overwhelming #basic fall nostalgia and pumpkin cravings.  In yearning for all things fall, I thought I’d pass along one of my favorite recipe finds from last year – Pumpkin Doughnuts!  I can’t wait to make these again when I’m back from NY.  I made a few of my own adjustments (below), but find the original recipe here.  It’s almost fall, y’all!

Time: 30 minutes
Yield: 12 doughnuts

I N G R E D I E N T S

2 cups all purpose flour
2 tsp. baking powder
1 1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
3/4 cup sugar
3/4 cup packed brown sugar
1/2 cup canola oil
3 large eggs
1 1/2 cups pumpkin puree
1 tsp. vanilla extract

Coating
1/3 cup sugar
1 tsp. ground cinnamon

D I R E C T I O N S

  1. Preheat oven to 350 degrees. Grease/butter doughnut wells and set aside. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
  2. In a large mixing bowl, whisk together granulated sugar and brown sugar until well combined. Add your wet ingredients (oil, eggs, pumpkin puree and vanilla extract. Using a mixer, blend until mixture is well combined.
  3. Spoon mixture into your doughnut baking pan.  Each well should be filled about 1/2 of the way. Bake for 7-10 minutes or until doughnut is firm, but not cooked all of the way through (toothpick should not come out clean).
  4. Remove from oven and gently remove each doughnut from individual wells. Grease/butter each well again and fill wells with more batter about 1/2 of the way.  Place your partially cooked doughnuts on top of the new batter and bake for 7-10 more minutes or until toothpick comes out clean.  Because the batter is quite heavy, these doughnuts won’t puff up like you’re used to traditionally.  The first time I made these, I skipped adding more batter and flipping the first set of doughnuts over – my doughnuts were flat on the bottom 😉
  5. Once doughnuts are baked all the way through, let them cool slightly and remove from the pan.  While doughnuts are cooling combine coating sugar and cinnamon in a ziplock bag. Add one doughnut at a time and shake until completely coated.  Enjoy while warm with your favorite coffee or hot apple cider. YUM!

Holiday Happenings

The week leading up to Thanksgiving through New Years Day make up my absolute favorite time of the year.  From the anticipation of time with family and friends to delicious food and Christmas music, there is a feeling in the air that is just electric.  The past week has been a busy one, but full of productivity and a few of my favorite holiday traditions.

  • My absolute favorite stationary company ever, Rifle Paper Co. had an amazing Cyber Monday deal that I took full advantage of.  We ordered some holiday cards and gift tags for my boyfriend’s annual holiday corporate gifting… but I seriously might have to sneak a few!  How adorable are they?!
  • Gorgeous Friday night sunset from our rooftop balcony at work.  Perfect ending to the week.
  • I’ve been dying to put our Christmas tree up since before Thanksgiving, but it finally happened over the weekend.
  • There she is!  All decorated.  More pictures to come 🙂
  • I know I’ve openly complained about this in the past, but our apartment has ONE (yes, ONE) closet and a tiny pantry.  Our old console table, just wasn’t cutting it and we really needed something that would allow for more storage so that we could use our minuscule make-shift pantry for what else?  Food.  I finally caved and bought an Ikea Malm in white and intend on decking it out in Overlays.  Definitely a project for a rainy winter weekend and I can’t wait.  For now, she’s a little plain Jane, but I couldn’t be happier to have a pantry that stores food instead of vases, crafts and cleaning supplies.  Plus, a white table instead of black really lightens up the hallway 🙂
  • And finally… our ONEHOPE Coffee has arrived!  We were like a bunch of kids on Christmas morning waiting as our President cut open the box and pulled out the bags for us to see.  What a wonderful Tuesday treat!

Team Thanksgiving Dinner

Last week I posted about our chic Thanksgiving Table inspiration for my company’s HOPEgiving celebration.  It’s the first time we’ve had a Thanksgiving dinner together so we really wanted it to be special in terms of food, wine pairings and decor.  Our Online Marketing Manager has been making Thanksgiving dinner for her family since she turned 18 so she planned (and cooked!) an insanely delicious feast for us while I took control over the tablescape.  The head of our Foundation has been wanting to write a new company manifesto, so we used the Holstee Manifesto cut up into bits to give everyone some inspiration with their place card.  We all wrote a line that we live by and pieced the puzzle together over dinner which made for some wonderful team bonding.  Lastly, our next big venture is ONEHOPE Coffee so I made sure to include some coffee beans mixed in with the florals as well as on everyone’s place setting as a reminder to be thankful for the incredible opportunities we have ahead.  I have to say, it was an absolutely magical evening filled with amazing food (and wine of course!), ONEHOPE family cheer and excitement for 2013!  What a great beginning to the holiday season!
